Easy Chicken Salad
Chicken and greens can be a very good meal choice when you are trying to cut down calories.
Chicken is rich in protein and the greens help you get fibers and required vitamins and minerals. Here is a quick and tasty recipe for a chicken salad.
1 (100 g) chicken breast (cal-165)
½ (75 g) green bell pepper (cal-12)
½ (75 g) red bell pepper (cal-19)
½ (75 g) yellow bell pepper (cal-25)
5-6 chopped button mushrooms (cal-20)
3 cloves chopped garlic (cal-13)
2 tsp Apple Cider Vinegar
Some crushed black pepper
Salt as required
1 tsp oil (cal-29)
1] Take a breast chicken in a plate. Add salt, black pepper, 1 tsp vinegar, mixed herbs and marinate it for about 8-10 minutes. Cover the chicken in marinate properly so that the flavors seep into the chicken well.
2] In a bowl add chopped mushrooms; chopped red, green, yellow, bell peppers; chopped garlic; 1 tsp vinegar; black pepper and mix well.
3] In a grill pan add the marinated chicken breast and cook one side for 6-8 minutes. Cook till the both sides become golden brown.
4] In another pan add the marinated vegetables and cook them for about 1-2 minutes, giving them a nice toss.
5] For the dressing. Take a small bowl and add 1/2 tsp vinegar, salt, oil, black pepper and give it a nice mix.
6] Take a plate add the vegetables and pour some dressing on it. Cut the chicken breast into slices and put them over the vegetables and pour some dressing on it. The dish is ready to be served.
